A Slice of Hilltop
Pizza, Cocktails, & Connection
Nestled into Tacoma’s historic Hilltop neighborhood sits Bar Rosa, an intimate cocktail bar serving up Italian wines, house-made cocktails, light beers, and IPAs. In addition to their extensive drinks menu, the Hilltop fixture also serves up fresh, woodfired pizzas, and a variety of thoughtfully curated appetizers.
You know you’ve arrived at Bar Rosa before ever stepping foot inside, with the glowing “Bar” sign sitting atop the roof, a beacon for the parched and hungry. As you near the greenery-wrapped entrance, the aroma of pizza mingles in the air with sounds of music and laughter.
Sitting down at the wooden hightop, glasses and water awaited us. After deciding to order from their shorter (but no less enticing) happy hour menu, we selected the passionfruit daiquiri, broccolini appetizer, and margarita pizza.
“There was an undeniable energy that buzzed through the bar”
There was an undeniable energy that buzzed through the bar: garage-style doors let in the cool fall breeze, friends met joyously and laughed with one another, the bartender talked easily with their patrons, and, with the bar’s open concept space, the sun filtered in illuminating it all.
Before we knew it, our drink, appetizer, and pizza arrived in quick succession. The drink, vibrant in color and garnished with a dried slice of fruit, tasted every bit as good as it looked. A bit tangy, a bit sweet, entirely refreshing, it is exactly the kind of thing you want on a sunny fall day.
Next to be passed around was the broccolini. Cooked to perfection, with just the right amount of crunch to it, and drizzled with a lemon cayenne aioli, the dish was bright, bold and had just the right amount of kick (spice-averse people need not worry, we promise). We surely could have stopped there and been happy, but of course there was one more thing on our table we’d yet to try and just couldn’t resist.
The margarita pizza came served on a pizza dish with a pair of scissors for cutting, a detail that anywhere else may have seemed out of place but here it felt perfectly attuned to the atmosphere. While a bit floppy, the pizza was flavorful, light and fresh, exactly what you want from a margarita pizza. One of the favorite parts was the slightly blackened areas of the crust due to the woodfire oven, which added depth and a slight smokiness to the pizza.
Overall, if you’re looking for a place to grab a bite and a good drink with friends that has a great energy, attentive staff, and fresh food, Bar Rosa is the place to be!
