Established in 2020, Doña Chole serves up some seriously fresh, flavor-packed tacos. Everything from their handmade tortillas to their five house-made salsas (ask about the Diablo salsa if you’re into some heat) feels carefully crafted, with authenticity shining in every bite.

Our crew sampled an ambitious lineup of tacos: Carne Asada, Pollo, Al Pastor, Mix Pork, Beef Tripe, Beef Tongue, Shrimp, Malibu Taco, and the now-iconic Birria Taco. I’ll admit, beef tripe isn’t usually my jam, but Doña Chole’s version? Juicy, flavorful, and messy in the best way (grab extra napkins!). We also ventured into new territory with the beef tongue taco, initially skeptical, but after one bite, we were converted. And the birria tacos? Cheese perfectly melted, tender meat, and the accompanying sauce… chef’s kiss.

To wash it all down, we opted for their homemade horchata and a classic Mexican Coke in a glass bottle, because nothing pairs better with street tacos on a sunny day in Tacoma. Seating is limited to a few stools and a makeshift ledge, but honestly, that just adds to the charm. The staff was incredibly welcoming, radiating that genuine Tacoma hospitality. They seemed just as excited about our visit as we were to be there, and even insisted on treating us, though supporting local was (and always will be) the goal.
